Makhana Mix (Savory Snack Mix with Fox Nuts)
This savory Indian-style trail mix is something my mum makes often. It's quick and easy, customisable and pairs well with a hot cup of tea or coffee, especially when those late afternoon hunger pangs strike. It also makes for a delicious cocktail snack during happy hours. You can even bottle up this snack mix up in little jars to make fun edible gifts or party favors.

Makhana Mix
Heat 1 tbsp coconut oil (ghee/butter if you prefer) in a wok and separately roast the following ingredients, one at a time:
1 cup fox nuts
1/4 cup almonds
1/4 cup cashews
1 tablespoon pumpkin seeds
and 1 tablespoon sunflower seeds
Set them aside to cool.
In the same wok heat 2 more teaspoons of oil/ghee, add a few curry leaves and fry until crisp.
Next, add in some salt to taste and 1 heaped tablespoon of your favorite dry chutney powder (my mum adds a spicy garlic chutney powder, but I opted for my milder curry leaf chutney podi).
Then add the roasted fox nuts, almonds, cashews, pumpkin & sunflower seeds and stir well to ensure they are evenly coated with the seasoning.
Remove from heat, cool and enjoy.
