Ricotta Kulfi - "Accidental" Cottage Cheese Popsicles
No use crying over “split” milk... especially when you can turn it into something delicious. That’s what I did when a potful of milk curdled whilst I was boiling it to make yogurt. Typically, I would’ve made bhurji (a savory scramble) with the curd cheese (chenna), but I was tempted to try something different. So I opted to make paneer ki kheer (milk pudding with fresh cottage cheese). I’d never eaten this dessert before, but I imagined it would taste somewhat like Rasmalai. I followed an online recipe, substituting the sugar with a reduced amount of jaggery syrup. To my dismay, it ended up tasting like bits of paneer floating in sweetened milk. I just couldn’t wrap my head around the texture, but I didn’t want to toss out the kheer.
So I blended the mixture, added some crushed nuts, rose water, saffron, & ground cardamom and transformed it into popsicles. A good move, I guess, because everyone who ate them (including my hard-to-please mum) agreed the kulfis were yum. Here’s to making the most out of unexpected situations.
