Asian Cucumber Salad

This simple Asian inspired cucumber salad is deliciously refreshing. It is bursting with flavor, super easy to make and pairs well with any meal. The combination of crunchy cucumber and peanuts drenched in a tangy, sweet and spicy dressing is like a party in your mouth.


Recipe

Asian Cucumber Salad

(Serves 3)

Ingredients

2 English cucumbers, thinly sliced
2 spring onions (greens only), finely chopped
2 tbsp cilantro leaves, finely chopped

For the Dressing
2 tbsp honey
1 tbsp sweet Thai chilli sauce (optional)
3 tbsp white/rice wine vinegar
2 tsp freshly squeezed lime juice
1 tsp toasted sesame oil (can be substituted with EVOO)
1 tsp crushed red chilli flakes
salt and freshly cracked black pepper to taste

To Garnish
1/4 cup salted, roasted peanuts, coarsely crushed
1 tbsp white sesame seeds, toasted

Method

In a bowl, combine the cucumber, spring onion and cilantro. Cover and refrigerate until chilled.

In a small bowl, whisk together all the ingredients for the dressing.

Just before serving, pour the dressing over the veggies and toss well to coat. Stir in the crushed peanuts.

Garnish the salad with the toasted sesame seeds and serve immediately.
