Beet, Banana and Berry Smoothie

Much needed post all the holiday indulgence… a simple smoothie that packs a punch. Loaded with fiber, antioxidants and protein to boost energy levels, it also tastes as good as it looks (this is literally one of the prettiest smoothies I’ve ever made). The reason I like smoothies is because they are like drinkable desserts… without the guilt. I cannot wait to get the last week of 2020 done and dusted…here’s to new beginnings, more self love and smoothies!


Recipe

Beet, Banana and Berry Smoothie

(Makes 1 large or two small servings)

Ingredients

1 medium sized beetroot, steamed, peeled and cubed
1 large frozen banana
1/2 cup mixed fresh/frozen berries 
1/4 cup rolled oats
2 tsp chia seeds
1 cup yogurt (use non-dairy for a vegan alternative)
1 soft, pitted date
1/2 tsp pure vanilla extract
1 scoop of collagen peptides (optional)
Dash of cinnamon 

Method

Combine all the ingredients in a high-powered blender and blend until completely smooth. Pour into a tall glass and enjoy!
