Beetroot Kulfis

Delicious and healthy! These Beetroot Kulfis are my entry for @hafele_india’s “Super Mom Super Food Challenge.” I chose to use beetroot because it is one of the most common, yet underrated superfoods. Beets are naturally packed with vitamins, minerals, antioxidants as well as micro and macronutrients. And they are easily available throughout the year. However, it can be a challenge to get kids to eat them. These frozen treats are a fun way to enjoy this nutritious superfood. They are easy to make with only a handful of simple ingredients. And they aren’t just pretty to look at, they also taste so good even picky eaters are sure to love them.


Recipe

Beetroot Kulfis

(Makes 6 small kulfis)

Ingredients

1 medium-sized (80 gms) beetroot boiled, peeled and chopped
1 large, ripe banana
3/4 cup thick yogurt
1/2 tsp vanilla extract
1 tsp fresh lime juice
Honey to taste
pinch of ground green cardamom
1 tbsp rose water (optional)

Method

Blend all the ingredients together in a high-powered blender until completely smooth.

Taste and adjust the sweetness, if needed.

Spoon the mixture into kulfi molds and freeze until set.
