Boozy Bourbon Chocolate Truffles
These healthy, boozy and absolutely yummy bourbon infused chocolate truffles are made with a mix of nuts, rolled oats, unsweetened cocoa, beet powder, dates and a little help from a Gentleman named Jack.
These easy and festive treats are refined sugar-free and dairy-free, but not lacking in Christmas spirit (Hic!). You can use any alcohol of your choice or leave it out entirely, but if you choose to omit it, add a tablespoon or two of water to bind). They're great for holiday gatherings & parties and also make delicious edible gifts.
Recipe
Bourbon Truffle Balls
(Makes 15-16 truffles)
Ingredients
1/2 cup pecans/walnuts
1/2 cup almonds
1/2 cup rolled oats
3 tbsp unsweetened cocoa powder
1 tbsp beetroot powder
1/2 tsp ground cinnamon
Pinch of salt
16-18 soft, pitted dates
2-3 tbsp bourbon (depending on how potent you want them)
1 tsp vanilla
Method
Pulse the nuts in a food processor a few times.
Add the remaining ingredients and pulse (scraping down the sides and stirring a few times in between) until the dates are puréed and the mixture comes together.
Refrigerate the mixture for half an hour or until firm, then form into bite-sized balls.
Roll the balls in cocoa powder (I also used crushed nuts & beetroot powder) and enjoy.
