Dark Chocolate Nut Clusters
Weekend indulgence doesn’t get any easier than these homemade dark chocolate and nut clusters. Simple, healthyish and yum, they make perfect edible gifts for any occasion.
Recipe
Dark Chocolate Nut Clusters
(Makes about 15)
Ingredients
150 gms of your favourite dark chocolate (store bought or homemade)
1 tsp oil
1/4 cup whole almonds
1/4 cup cashew halves
1/4 cup walnut halves
1/4 cup dried raisins/cranberries (optional)
1/4 tsp ground cinnamon
Fleur de sel to sprinkle (optional)
Method
Toast the nuts in a pan or in the oven until lightly golden. Set aside to cool.
Line a baking tray with a Silpat or wax paper.
Break the chocolate into small pieces and add to a microwave safe bowl along with the oil. Microwave on high for 30 second intervals, stirring in between. Repeat this for about 3 minutes or until the chocolate is completely melted. Alternately, you can also melt the chocolate (and oil) in a double boiler.
Once the chocolate is fully melted, mix in the nuts, dried fruit (if using) and cinnamon. Stir well until the nuts are coated with chocolate.
Drop teaspoonfuls of the mix onto the lined tray.
Sprinkle a tiny bit of sea salt on top of each cluster (you can also garnish them with some coloured sprinkles if you like).
Place the tray in the refrigerator for an hour or until the clusters are set.
Remove gently and transfer to an airtight container.
