Chocolate Pudding Popsicles

These popsicles are dairy-free, naturally sweetened only with dates and also contain a surprise ingredient (that no one will guess). The recipe is adapted from a chocolate pudding I shared a few months ago. These popsicles are so creamy, chocolatey, and delicious, plus you’re still eating your veggies (win-win). Seriously though, try them... (even if you’re not a chocoholic like me) you won’t be disappointed, I promise.


Recipe

Chocolate Pudding Popsicles

(Makes 8 small popsicles)

Ingredients

1 1/4 cup (250 gms) boiled and mashed sweet potato
1/4 cup cocoa powder (I added 1 tbsp extra, because I like a slightly bitter edge. Also, use the best quality cocoa you can find, it makes all the difference)
1/2 cup thick coconut milk
3/4 cup thin almond milk
1/2 tsp ground cinnamon
2 tsp pure vanilla
6 large and soft dates, pitted
Pinch of salt

Method

Blend all the ingredients together in a high-powdered blender, scraping down the sides a few times in between, until you end up with a very smooth, pudding-like mixture. Spoon it into popsicle molds, freeze until set and enjoy.
