Chocolate Shrikhand

This creamy, luscious Chocolate Shrikhand is easy to make. The addition of a dark chocolate ganache adds a delicious twist to a festive classic. Grab a spoon and dig in! Happy Navratri, Gudi Padwa and Ugadi to all who celebrate.

Recipe

Chocolate Shrikhand

(Serves 4)

Ingredients

4 1/2 cups plain yogurt (full fat works best)
1/2 tsp ground green cardamom
75 gms semi-sweet or dark chocolate, chopped into bits
1/4 cup fresh cream (I used Amul Fresh Cream)
Honey, powdered sugar (or sweetener of choice) to taste
2 tbsp chocolate shavings, to garnish
2 tbsp chopped pistachios or almonds, to garnish
Cut fruit or berries, to garnish (optional)

Method

Tie the yogurt in a cheesecloth (2-3 layers thick), set over a strainer with a bowl underneath to collect the whey. Place a small weight on top and allow the whey to drain for about 6 hours. Once most of the liquid has drained out and the yogurt is very thick, transfer it to a mixing bowl (discard or use the whey for something else). You should be left with about 2 cups of hung yogurt.

Whisk the hung yogurt and cardamom until smooth.

In a microwave safe bowl, combine the chocolate and cream. Microwave on high for 30 seconds. Whisk until completely smooth.

Combine the chocolate ganache with the yogurt and whisk well to combine. Sweeten to taste with your sweetener of choice.

Refrigerate the chocolate shrikhand until chilled.

Serve garnished with the chocolate shavings, chopped nuts and/or fruit of your choice.
