Coconut Laddoos

This is another super simple recipe I recently made and shot for a client. Just four ingredients and 15 minutes are all you need to make these melt-in-the-mouth delicious coconut fudge balls. I like to keep them bite-sized for portion control (also because they look cuter). With the festive season approaching, these would make perfect edible gifts. You can add a touch of color by mixing a drop of food coloring into the laddoo mixture before rolling. Personally, I prefer the simplicity of the pale ivory.

Recipe

Coconut Laddoos

(Makes about 24 small laddoos)

Ingredients

3 cups desiccated coconut powder, divided
200 ml sweetened condensed milk 
1/2 tsp ground green cardamom
3-4 tbsp milk 

Method

Set aside 1/3 cup of the desiccated coconut for rolling. 

Add the remaining desiccated coconut powder, condensed milk and cardamom powder to a wide, heavy based pan. Cook on low heat, stirring continuously for 5-6 minutes (take care to not let the mixture catch at the bottom of the pan or turn brown).

Add the milk and continue to stir for another minute until the mixture starts to leave the sides of the pan. 

Remove from heat and allow the mixture to cool slightly.

Once cool enough to handle, divide the mixture into equal portions and shape into balls. Roll them in the reserved desiccated coconut. 

Store the ladoos in an airtight container. They will keep for 3-4 days stored at room temperature and longer if refrigerated.
