Coffee and Cocoa Bliss Balls
The easiest dessert to make when you can’t think of anything else. As an added bonus, these bliss balls also refined sugar-free, gluten-free, vegan and paleo-friendly. To switch things up a bit, I added in some filter coffee and rolled a few in unsweetened beet powder (just to make them prettier).

Coffee and Cocoa Bliss Balls
(Makes 16 bliss balls)
Ingredients
1 1/4 cup mixed nuts (I used almonds and walnuts)
1 tbsp chia seeds
3 tbsp cocoa (plus more for rolling)
1/2 tsp ground cinnamon
150 gms soft, pitted dates
2 tbsp strong, hot espresso/coffee (I used filter coffee decoction)
1 tsp pure vanilla extract
Pinch of salt
Method
Soak the dates in coffee, vanilla and salt for 15 minutes.
Pulse the chia seeds and nuts in a blender until finely ground. Add them to bowl along with the cocoa and cinnamon and mix well to combine.
Purée the soaked dates and coffee and add to the powdered nuts. Mix well and refrigerate for half an hour.
Lightly grease your palms and roll tablespoonfuls of the mixture into balls, roll in cocoa powder to coat and enjoy.
Store refrigerated in an airtight container.
