Custard Apple Kulfis
Here is another easy and delicious kulfi recipe made with seasonal custard apples. No doubt, it is a bit laborious to scrape the fruit and remove the pits, but the final result is well worth the effort. As an additional step, I also strained the custard apple flesh through a metal mesh strainer to make sure I had not accidentally missed removing any pits. I used erythritol to sweeten these kulfis. Because custard apples tend to be very sweet, I did not need to use too much added sweetener. For folks looking to go a conventional route, condensed milk would be ideal.
Recipe
custard apple Kulfis
(Makes 6 kulfis)
Ingredients
3/4 cup custard apple flesh (measured after removing the pits)
3/4 cup cream ( I used Amul fresh cream)
2-3 tbsp erythritol or 1/4 cup condensed milk (alternately, you can add any sweetener of your choice to taste)
1/4 tsp ground green cardamom
Method
Reserve 1 tbsp of the custard apple flesh and transfer the rest to a blender along with all the other ingredients. Blend until completely smooth.
Stir in the reserved custard apple and spoon the mixture into kulfi molds.
Freeze the kulfis for 40 minutes, then insert wooden skewers/popsicle sticks into each one. Freeze again for 4-6 hours.
To unmold the kulfis, dip the molds into boiling hot water for a few seconds, extract the kulfis and enjoy!
