Easy Homemade Granola
In the past few days, I have cooked and cooked… large quantities of food (dal, rice, chicken and veggies) that have been labelled and stashed away in the refrigerator for the boys. I also made a big batch of granola for their breakfast (or maybe snack/dessert) whilst I’m gone. I used a lot less honey than usual, so there are no clusters. But it is still crunchy, delicious and (with the dried fruit) plenty sweet.

Easy Homemade Granola
Ingredients
Dry Ingredients
3 cups rolled oats
1/4 cup melon seeds
1/4 cup sesame seeds
2 tbsp flaxseeds
1/4 cup unsweetened desiccated coconut
1 cup mixed nuts (use any combination of nuts)
Wet Ingredients
1/4 cup honey (you can also use maple/date syrup. Add more if you prefer your granola sweeter)
3 tbsp melted coconut oil
1/2 cup water
1/2 tsp cinnamon
2 tsp vanilla
Pinch of salt
Add-ins -
1 cup dried fruit (use any combination of your choice)
Method
Preheat oven to 180°C and line a large baking sheet with parchment paper/Silpat.
Whisk together the wet and dry ingredients separately and then combine.
Spread the mixture evenly onto the parchment/Silpat. Make sure to spread the granola in a thin layer or else it won’t bake up crunchy. Bake for about 25 minutes, stirring and rotating midway (keep a close eye on the granola once the edges start to brown).
Remove from the oven, cool completely and mix in the dried fruit.
Enjoy the granola with some yogurt and fresh fruit. Store in an airtight container.
