Honey Soy Chicken
A quick, easy and versatile dish that can be served alongside veggies, fried rice, noodles or salad. Top it with a fried egg if you like. That sticky, sweet and savory sauce is everything!

Honey Soy Chicken
(Serves 2)
Ingredients
500 gms skinless, boneless chicken thighs (cut into quarters)
1/2 tsp white vinegar
Salt and pepper to season
2 tsp oil or ghee
For the Sauce
1 tsp ginger-garlic paste
1 tsp red chilli flakes
2 tbsp dark soy sauce
3 tbsp honey
1 tbsp fresh orange/lemon juice
To Garnish
1 tbsp chopped cilantro
1 tbsp chopped spring onion greens
2 tsp toasted sesame seeds
Method
Wash the chicken thighs and pat them dry with a paper towel. Sprinkle lightly with salt and pepper. Add the vinegar and toss to coat.
In a bowl, mix together the ingredients for the sauce and set aside.
In a skillet, heat a teaspoon of oil/ghee on medium heat and add the chicken thighs. Do not crowd the pan - sauté the chicken in two batches if you need to, adding another teaspoon of oil for the second batch. Sear the chicken on each side for about 4-5 minutes until browned and cooked through, then remove from the pan (covering the pan with a splatter-shield is recommended).
Wipe the pan clean with a paper towel, add in the sauce mixture and the sautéed chicken. Cook on medium-low heat, turning the pieces of chicken so that they are evenly coated with the sauce. Once the sauce starts to thicken, stir in the cilantro and spring onion greens and garnish with the sesame seeds. Serve immediately.
