Kesariya Badam Doodh (Saffron Infused Almond Milk)

Either way, this comforting Kesariya Badam Doodh is a sure to soothe your soul. This dairy-free recipe calls for almond milk, but feel free to substitute it with any milk of your choice.

Kesariya Badam Doodh
(Serves 2)
Ingredients
4 cups almond milk (homemade or store bought)
1/2 tsp saffron strands
1/4 tsp turmeric powder (optional)
Pinch of black pepper powder
2 tbsp almonds, coarsely powdered
1/2 tsp ground green cardamom
Sugar or powdered jaggery to taste
1 tbsp chopped almonds/pistachios to garnish
Method
In a heavy-based saucepan, bring the almond milk to a gentle boil over low heat.
Add the saffron, turmeric powder and black pepper. Simmer for 8-10 minutes, stirring frequently until the milk reduces a little.
Stir in the ground almonds, ground cardamom and add sugar to taste (if using jaggery, add it just before serving). Simmer for a few more minutes.
Remove from heat and pour the milk into two cups. Garnish with the chopped nuts and enjoy warm.
