Kiwi Kulfis
It’s been a hot minute since popsicles showed up on my blog. Still making them, still eating them. These Kiwi Kulfis are creamy and delicious with a tangy twist from the addition of fresh kiwis. Enjoy!

Kiwi Kulfi
(Makes 6 kulfis)
Ingredients
3 ripe kiwi fruit
1 cup fresh cream (I used Amul Fresh Cream)
6 tbsp condensed milk
1/4 cup sugar/honey (quantity can be adjusted to taste)
2 tbsp coarsely ground almonds or pistachios (optional)
1 tsp pure vanilla extract
Pinch of salt
Method
Wash and peel the kiwi fruit. Slice half of one kiwi into thin rounds and keep aside. Chop the rest of the fruit into cubes.
In a small bowl, combine the chopped kiwi fruit and sugar. Use a fork to mash them together until the sugar dissolves.
In another bowl, whisk together the cream, condensed milk, vanilla extract and salt. Stir in the crushed kiwi and powdered nuts. Mix well to combine.
Press a slice of kiwi against the inner wall of each kulfi mold and pour in the kulfi mixture. Place the molds in the freezer for 30-40 minutes, then insert a wooden skewer/popsicle stick into each kulfi. Allow the kulfis to freeze for 4-6 hours.
To remove the kulfis from the molds, dip them in hot water a few times and extract the kulfis. Serve immediately.
