Malai Laddoos

This is an easy, delicious recipe for homemade malai laddoos. They can be made with either homemade or store bought cottage cheese (paneer), as long as it is fresh and not frozen. Happy Dussehra to all who celebrate!

Malai Laddoos

(Makes about 8 laddoos) 

Ingredients

200 grams fresh cottage cheese/paneer (homemade or store bought)
100 grams unsweetened khoya (condensed milk solids)
1/3 cup condensed milk (add more to taste) 
2-3 tbsp milk 
2-3 tsp ghee
1/2 tsp ground green cardamom
A few sliced pistachios to garnish

Method

In a blender, combine the paneer, khoya and condensed milk. Blend until completely smooth, adding 2-3 tbsp of milk as needed.

Transfer the mixture to a nonstick pan and cook, stirring continuously over medium-low heat. Once the mixture is heated through, add a teaspoon of ghee and continue to cook, scraping down the sides of the pan. As the mixture thickens, it will start to leave the sides of the pan (and you will need some elbow grease to keep stirring it). Once the mixture comes together, add 1 or 2 more teaspoons of ghee and turn off the heat. 

Mix in the ground cardamom and allow the laddoo mixture to cool for 5 minutes. 

Once the mixture is cool enough to handle, divide it into 8 equal portions and roll them into balls. Decorate each laddoo with a slice of pista and serve. 

Store any leftovers in an airtight container in the refrigerator for 2-3 days.
