Mango Shrikhand Frozen Yogurt Bark

Another easy, refreshing and delicious way to enjoy summer’s bounty. This Indian-inspired frozen yogurt bark is flavored with mango, saffron and cardamom. It is super simple to make and is sure to be a hit with adults and kids alike.


Recipe

Mango Shrikhand Frozen Yogurt Bark

(Makes 3-4 servings)

Ingredients

1 ripe mango, peeled and chopped (Alphonso, Badami or Kesar mangoes work best)
3/4 cup (180 gms) plain unsweetened Greek yogurt
1 - 2 tbsp honey/powdered sugar
1/4 tsp ground cardamom
1/8 tsp grated nutmeg
Pinch of saffron
Some crushed pistachios, cashews and dried rose petals for garnish

Method

Purée the mango in a blender/food processor until smooth. Add in the Greek yogurt, honey, cardamom, nutmeg and saffron. Blend again until smooth.

Spread the mango shrikhand mixture evenly on a parchment lined tray.

Sprinkle the nuts and dried rose petals on top. Press them down lightly into the shrikhand.

Place the tray in the freezer for 6-8 hours or overnight. Once the yogurt is set, remove the tray from the freezer and cut/break the bark it into pieces and serve immediately.

Store any remaining bark in a zip lock bag in the freezer.
