Purple Sweet Potato Latte
I was lucky enough to source some purple sweet potatoes locally. I have so many recipe ideas floating around in my head (but not enough sweet potato). I really wanted to highlight the beautiful natural purple color. The very first recipe I tried was this silken, luxurious and delicious sweet potato latte. The flavor was such a revelation!
This cozy drink can be made with any milk and/or sweetener of your choice. I used a mix of whole milk and added some condensed milk for sweetness. If purple sweet potatoes are not available where you live, swap them for any variety of sweet potato. The latte probably won’t look as pretty, but it will still taste good.
Recipe
Purple Sweet Potato Latte
(Makes 1 serving)
Ingredients
1/4 cup purple sweet potato puree*
1 cup milk of choice, divided
1 1/2 tbsp sweetened condensed milk or sweetener of choice to taste
1/2 tsp pure vanilla extract
1/8 tsp ground cinnamon
Pinch of salt
Method
Reserve 1/4 cup of milk and set aside. Combine the rest of the ingredients in a blender. Blend until completely smooth. Taste and adjust the sweetener if needed and blend again.
Transfer the mixture to a small saucepan. Bring to a gentle simmer over low heat, stirring frequently. Once the milk is heated through, turn the heat down to low.
Heat the remaining 1/4 cup of milk in the microwave or in another pan on the stovetop. Use an electric milk frother or a French press to froth it well.
Take the hot sweet potato milk off the stove and pour it into a cup. Top with the milk froth and serve immediately.
*Steam the purple sweet potatoes until completely cooked through. Cool, peel and grate or pass the flesh through a potato ricer (I prefer the latter because it helps get rid of unwanted fibers). Mash well with a fork and use.
