Roasted Plum, Cardamom and Honey Popsicles (Refined Sugar-free)
Juicy plums are baked until they turn jammy, then blended with tangy Greek yogurt, sweetened with honey and scented with cardamom. Easy to make, healthy and delicious, these frozen treats are a refreshing finale to any meal.

Roasted Plum, Cardamom and Honey Popsicles
(Makes 6 popsicles)
Ingredients
500 grams ripe plums (about 8 medium-sized plums)
6 tbsp honey, divided
1/2 cup single cream
1/2 cup plain Greek yogurt
1/2 tsp ground cardamom
1/2 tsp pure vanilla extract
2 tsp lemon juice (or to taste)
Pinch of salt
Method
Preheat your oven to 180°C.
Slice the plums in half. Remove and discard the pits. Place the fruit, cut side up, in a baking dish. Drizzle with a tablespoon of honey and bake for 15-20 minutes until the plums are soft and yielding. Remove from the oven and cool completely.
Transfer the roasted plums (along with any syrup) to a high-powered blender. Purée until completely smooth.
Add the remaining ingredients into the blender and blend until smooth. Pour the mixture into popsicle molds and freeze for 30 minutes.
Insert wooden skewers or popsicle sticks into the popsicles and freeze again for 4-6 hours or until set.
Dip the popsicle molds into a mug of boiling water a few times, remove the popsicles and enjoy!
