Salted Caramel Apple Popsicles
Caramel apple but make it a popsicle! Sprinkle some flaky sea salt into the caramel and there’s a winning combo. These tart, sweet and creamy Salted Caramel Apple Popsicles are naturally sweetened with stewed apples and date caramel. Creamy Greek yogurt adds extra tang. Enjoy the classic flavors of fall in this easy and fun dessert.

Salted Caramel Apple Popsicles
(Makes 6 small popsicles)
Ingredients
For the Stewed Apples -
2 Granny Smith apples, peeled, cored and diced
1/2 cup water
Dash of cinnamon
Pinch of salt
For the Date Salted Caramel -
1/2 cup tightly packed dates
1/2 cup boiling water
1/4 cup canned coconut milk
2 tsp pure vanilla extract
1/4 tsp flaky sea salt
For the Popsicle Base -
1/2 cup plain unsweetened Greek yogurt
Date caramel to taste
Stewed apples, divided
Method
Stew the Apples: In a heavy based saucepan, combine the chopped apples, water, cinnamon and salt. Bring to a boil, then turn down the heat. Cover and simmer until the apples are soft and mushy. Remove the lid and continue to simmer until the excess liquid evaporates. Turn off the heat, mash lightly and set aside to cool.
Make the Date Salted Caramel: Soak the dates in boiling water for 10 minutes. Remove and discard the pits. Transfer the dates along with the soaking liquid, coconut milk, vanilla and salt to a blender. Blend, scraping down the sides a few times, until completely smooth. Transfer the date caramel to a bowl.
Make the Popsicles: Set aside 2 tbsp of the stewed apple. Add the rest to the blender along with the Greek Yogurt and 1/3 cup of date caramel. Blend until smooth. Taste and add more date caramel if you like (the amount will vary depending upon your preference and the tartness of the apples - you may have some or none leftover).
Pour the popsicle mixture into the popsicle molds, stir a little of the reserved stewed apple into each one and freeze for 40 minutes. Insert a wooden skewer/popsicle stick into each popsicle and freeze for 4-6 hours.
To remove the popsicles from the molds, dip them in hot water a few times, extract and enjoy!
