Savory Indian Style Overnight Oats

In a bowl, mix together 1/2 cup rolled/quick-cooking oats, 1 cup thick yogurt and 1/2 cup water. Season to taste with salt & black pepper, cover and refrigerate overnight.

Before serving, heat 1 tsp oil in a tempering pan. Add 1 dried red chilli (broken in half), a pinch of asafetida (hing), 1/2 tsp cumin (zeera) seeds, 1/4 tsp mustard (rai) seeds and 6-7 finely chopped curry leaves. When the seeds splutter, remove from heat and mix into the oats.

Stir in 1/2 tsp of any Indian pickle (achaar) of your choice, taste and adjust the seasoning as needed.

Finally, top with some chopped cilantro, cucumber, roasted peanuts and/or any savory mixture (namkeen) of your choice for an added crunch.
