Tender Coconut Popsicles

It’s always popsicle season around here! Here’s another delicious and super easy recipe. Homemade coconut milk will give these popsicles the best flavor. If you use store bought coconut milk, make sure it’s the “full fat canned variety” (not the Tetra Pak one).


Recipe

Tender Coconut Popsicles 

(Makes 6 small popsicles)

Ingredients 

Soft flesh of 2 tender coconuts, divided
1 cup thick coconut milk
1/2 cup coconut cream (This can be substituted with heavy cream)
3 tbsp maple syrup/honey (Add more if you prefer. This can be substituted with condensed milk)
Pinch of salt 

Method 

In a blender, purée the flesh of one tender coconut until smooth.

Add the coconut milk, coconut cream, sweetener of choice and salt. Blend again until completely combined.

Chop the remaining tender coconut flesh into small pieces and stir it into the popsicle mixture.

Pour the mixture into popsicle molds and freeze until set.
