Frozen Peach and Bourbon Blender Cocktail

This refreshing blender cocktail is made with fresh peaches. The recipe was adapted from Epicurious. It is fruity, easy to make (just throw everything together in a blender) and versatile. If you are not keen on whiskey, swap it out with gin or rum. If you don’t like peach, use mango instead. You can even pour the cocktail into popsicle molds to make boozy ice pops. For a kid-friendly version, use peach or orange juice instead of the alcohol. This grown-up slushy would make a cool addition to any summer brunch.


Recipe

Frozen Peach and Bourbon BLENDER Cocktail

(Makes 3 servings)

Ingredients

1 1/2 cups sliced peaches, frozen*
1 cup ice 
1/3 cup bourbon (can be substituted with peach/orange juice)
2 tbsp coconut or brown sugar 
1/4 tsp citric acid crystals (can be substituted with 2 tbsp lemon juice)
1/4 tsp ground cardamom 
2 tbsp water 

To Garnish -
3 sprigs mint/basil
3 peach slices
1/2 tsp fleur de sel or maldon salt

Method

Combine all the cocktail ingredients in a high-powered blender. Blend, stirring a few times in between, until completely smooth.

Pour into three glasses, garnish each with sprig of fresh mint/basil and a peach slice. Sprinkle some fleur de sel on the fruit and serve immediately. 

*Pit and slice 3-4 ripe peaches, lay them flat on a metal plate/tray and freeze until solid.
