Raw Mango Buttermilk (Kairi Ki Lassi)

There is no denying that mangoes are the best part about Indian summers. We love our mangoes and we use them in just about every dish, sweet or savory. And though the taste of a ripe and juicy golden mango is unmatched, let’s not forget to give raw mangoes their due; they are as delicious and versatile in their own right.

Paired with yogurt, mint and chilli, they add a unique flavor to this energizing drink. Raw mango buttermilk is a cool, tangy and subtly spiced beverage that takes only minutes to make. It is also good for your gut and offers refreshing respite from the stifling heat of an early summer.


Recipe

Raw Mango Buttermilk

(Makes 2 servings)

Ingredients

1 1/4 cups plain yogurt
1/4 cup raw (green) mango, peeled and cubed
1 tbsp chopped cilantro
1 tbsp fresh mint leaves
1” piece ginger, peeled 
1 green chilli, deseeded and chopped (optional)
1/2 tsp roasted cumin powder
1/2 tsp black salt (kala namak)
Salt to taste
Sweetener of choice, to taste
Lots of ice

Method

Combine all the ingredients except the ice in a high-powered blender. Blend until smooth. Taste and adjust the salt and sweetener as needed and blend again.

Strain the buttermilk to get rid of the fibers and residue.

Fill two glasses with ice. Pour in the buttermilk, sip and enjoy!
