Yogurt Mousse with Cardamom and Rosewater (Gluten-free, Refined Sugar-free)

This fragrant and indulgent dessert is made with Greek yogurt, whipped cream and honey. It is cool, smooth and luscious. It is also eggless, refined sugar-free, gluten-free and very simple to make. The perfect summer treat!

Yogurt Mousse with Cardamom and Rosewater

(Makes 4 servings) 

Ingredients

1 1/2 cups heavy whipping cream (I used Amul Whipping Cream)
2 1/4 tsp unflavored gelatin powder or 1 tsp agar agar powder
1/4 cup cold milk 
1/3 - 1/2 cup honey (add more or less to taste)
2 tsp lemon juice 
2 tsp rosewater
1/2 tsp ground cardamom
1 cup plain full-fat Greek yogurt or hung curd
1 tbsp crushed pistachios, to garnish 
2 tsp dried rose petals, to garnish 

Method

Whip the cream into soft peaks and set aside. 

In a small saucepan, combine the gelatin with the cold milk and let it bloom for 5 minutes. Place the saucepan over low heat and stir until the gelatin dissolves.

Remove from heat and add the milk to a mixing bowl. Add the honey, lemon juice, rosewater and ground cardamom and mix well. Add the Greek yogurt and whisk until smooth. 

Gently fold the yogurt mixture into the whipped cream. Taste and adjust the sweetener if needed. Spoon the mousse into four dessert bowls. Cover with plastic wrap and refrigerate for a few hours until set. 

Garnish the yogurt mousse with dried rose petals and crushed pistachios. Serve chilled.
