Banana Berry Chia Pudding

Yes, chia pudding is a healthy and super simple make-ahead breakfast or post-workout snack. But at home, I often serve it as dessert to satisfy our sweet cravings (it is called “pudding,” after all). In fact, this banana berry chia pudding was what we ate post-dinner last night when a friend came to visit (and thankfully, he enjoyed it). It’s as easy as blending up your favorite fruit smoothie and using it to soak the chia seeds.


Recipe

Banana Berry Chia Pudding

(Serves 2)

Ingredients

1 banana
1/2 cup frozen berries (I used blueberries and raspberries)
2 soft, pitted medjool dates
1 cup coconut milk (or any milk/yogurt of your choice)
1 tsp pure vanilla
1/2 tsp ground cinnamon
3 tbsp chia seeds

Method

Blend bananas, frozen berries, dates, coconut milk, vanilla and cinnamon in a high-powered blender until smooth.

Add this mixture to a bowl along with the chia seeds and stir well to combine.

Cover and let it rest on the kitchen counter for half an hour. Stir well once more and break up any clumps that may have formed (you can add a little more liquid if the pudding is too thick), then cover and refrigerate for at least 3 hours or overnight.

Serve chilled topped with any fresh/dried fruit, nuts or more berries and enjoy.
