Coconut Iced Coffee
A perfect afternoon pick-me-up... this is one of the few ways I enjoy coffee. I’ve even made a version with homemade boba pearls. Cool, creamy and so refreshing!
Recipe
Coconut Iced Coffee
(Makes 1 large/2 medium servings)
Ingredients
1/2 cup strong brewed coffee of your choice, cooled
200 ml canned coconut milk
2-3 tbsp powdered jaggery/coconut sugar (or any sweetener of your choice to taste)
Lots of ice
Method
In a saucepan, heat the coconut milk and sweetener on a low flame, stirring until the milk thickens to the consistency of cream.
Remove from heat and cool.
To serve, pour 1/4 cup of the coconut milk into a glass, add a large handful of ice, stir in the coffee (add enough to make it as strong as you like) and enjoy.
