Coffee Almond Cookies

One of the simplest cookie recipes ever... These Coffee Almond Cookies contain no butter, no flour, no refined sugar and no eggs. Just a handful of simple ingredients, mixed together and baked into delicious, chewy, nutty treats. The easy recipe, adapted from @thekitchn, is shared below. I used a fragrant filter coffee blend from @coffee_hulikere, but instant espresso powder would work just as well. 


Recipe

Coffee Almond Cookies

(Makes 8-9 cookies)

Ingredients

1 cup blanched almond flour ( I used Bob’s Red Mill brand)
1/4 tsp gluten-free baking powder 
1/4 tsp cinnamon 
1 tbsp coffee (use either instant espresso or your favorite coffee grounds)
2.5 -3 tbsp maple syrup/runny honey 
1 tsp vanilla/dash of almond extract 

Method

Preheat your oven to 350°F/175°C and line a baking tray with a Silpat/parchment paper.

Whisk together the almond meal, baking powder, cinnamon and coffee (use your fingers to break up any lumps).

Transfer the mix to a bowl and stir in the sweetener and extract. Use a spatula or your hand to mix well and form a smooth dough.

Roll tablespoons of the cookie dough into balls and set them 2” apart on the baking sheet. Lightly grease the bottom of a water glass and flatten them slightly.

Bake for about 12 minutes (turning once midway) until the cookies start to brown around the edges.

Remove from the oven and cool on the baking sheet for a couple of minutes. Then transfer to a wire rack, cool completely and enjoy!
