Oatmeal Chocolate Pudding

Revisiting an old recipe because strawberries are in season. This Oatmeal Chocolate Pudding is more healthy than decadent (though you wouldn’t guess it). Just a few basic ingredients blitzed until smooth and cooked to creamy pudding perfection. So simple and delicious. 


Recipe

Oatmeal Chocolate Pudding

Ingredients

1 cup (gluten-free) rolled oats
2 tbsp unsweetened dark cocoa powder
2 cups filtered water
1/2 cup coconut milk (or any milk of your choice)
Any sweetener of your choice to taste (I added 6 soft, pitted dates)
1/2 tsp ground cinnamon 
1 tsp vanilla
Pinch of salt

Method

Powder the oats in a high-powered blender. Then add the rest of the ingredients and blend until smooth.

Transfer the mix to a saucepan and cook over medium-low heat for 5-7 minutes, whisking often.

Once the pudding is thick, remove from heat and ladle into ramekins/individual dessert jars.

Top with whipped coconut cream and any fresh fruit (or dried fruit and nuts) of your choice and enjoy warm or chilled.
