Filter Coffee and Coconut Chia Pudding

What I most look forward to on weekends? Not having to wake up to an early morning alarm. I made this filter coffee and coconut chia pudding for tomorrow’s breakfast. This will be chilling in the refrigerator overnight while I catch up on some much needed sleep. Some days it’s worth trading in a hot breakfast for those extra Zzz’s, don't you think? 


Recipe

Filter Coffee and Coconut Chia Pudding

(Serves 2)

Whisk together 3 tbsp chia seeds, 1 cup thick coconut milk, 1/2 tsp vanilla, 1/4 cup strong filter coffee decoction and jaggery syrup to taste.

Let it sit on your kitchen counter for 30 minutes, then stir well once more, breaking up any clumps that may have formed.

Cover and refrigerate overnight.

Serve chilled topped with any nuts of your choice (you may need to add more coconut milk if the pudding is too thick).
