Mango Kheer (Rice Pudding with Mango)

A profusion of mangoes on the verge of overripening led to this... Mango Kheer (rice pudding with mango). I made the kheer using leftover rice and coconut milk (recipe shared here). I flavored it with saffron and cardamom while cooking and once cooled, I mixed in fresh Alphonso mango pulp. I also added some chopped mango and crushed pistachios for textural contrast. Delicious, especially when served chilled.
