Onion and Cashew Pakoras (Air Fryer version)
Golden, crunchy onion and cashew fritters made in the air fryer. Quite delicious, especially considering how little oil is used.

Onion and Cashew Pakoras
Thinly slice two large red onions.
Whisk together 1 cup of chickpea flour (besan), 1/2 cup of rice flour, 2 tbsp broken cashew bits, 1/2 tsp carom seeds (ajwain), 1 tsp coriander powder, 1/2 tsp cumin powder, 1/4 tsp turmeric, 1/2 tsp red chilli powder and salt to taste. Stir in 1/4 cup of yogurt (omit for dairy-free version), 2 tbsp of oil and enough water to form a thick batter.
Add the sliced onion, 2 tbsp chopped cilantro and 8-10 finely chopped curry leaves. Let the mixture rest for 10 minutes.
Preheat the air fryer to 350°F/180°C. Brush/spray the tray with some oil. Place tablespoonfuls of the batter into the tray, flatten slightly and fry on each side for about 7-8 minutes or until golden brown.
Transfer to a plate, sprinkle with a little chaat masala and serve immediately.
