Salted Chocolate Makhana

Weekend experiments... salted chocolate fox nuts. Surprisingly good (and I’m not even a chocolate person).

Salted Chocolate Makhana

Ingredients

For the base:

2 tsp coconut oil/olive oil/unsalted butter/ghee
100 gms raw fox nuts (makhana)

For the chocolate mixture:

1 1/2 tbsp dark cocoa powder 
1 tbsp melted coconut oil/olive oil/unsalted butter/ghee
1 1/2 tbsp maple syrup/honey
1 tsp pure vanilla
1/4 tsp ground cinnamon
A large pinch sea salt 

Method

Melt 2 tsp of oil in a Dutch oven/deep nonstick pan over medium low heat and add the fox nuts. Roast, stirring frequently, for 10-12 minutes or until the fox nuts are crunchy and golden brown.

In a small bowl, mix together the cocoa, melted oil, maple syrup, vanilla, cinnamon and salt until well blended.

Once the fox nuts are roasted, turn down the heat to low and add in the cocoa mixture. Stir well to evenly coat the fox nuts and continue to roast over low heat for 3-4 more minutes.

Remove from heat and spread in a single layer on a baking tray/plate. Leave to cool for about 15 minutes, then enjoy.

Store in an airtight container and consume within 2-3 days.
