Stir-fried Snow Peas with Cashews. A quick and easy stir-fry that’s perfect for busy weeknights. I love the crunchy, sweet texture of fresh snow peas and I was so excited when I spotted them at Namdhari’s.

Stir-fried Snow Peas With Cashews

Ingredients

1 tbsp coconut oil
2 tbsp raw cashews, crushed/coarsely chopped 
2 cloves garlic, finely minced
1 small red onion, finely diced
1/2 tsp crushed red chilli 
250 gms snow peas, washed and trimmed
Salt & pepper to taste 

Method

Heat oil over medium heat, then add the cashews & garlic and fry until golden.

Add the onion & chilli flakes and fry until the onion turns transparent.

Add the snow peas and continue to sauté for a couple of minutes until they are tender but still crunchy.

Season to taste with salt and pepper.

Serve immediately.
