Turmeric and Coconut Broth

Turmeric and Coconut Broth

(Serves 2)

Ingredients

2 tsp grated fresh turmeric root
1 tsp grated fresh ginger
5 pods garlic, crushed or 1 tsp garlic powder
1/4 tsp turmeric powder
1/2 tsp freshly cracked black pepper
1/4 tsp crushed red pepper (optional)
Dash of cinnamon and nutmeg
3 cups vegetable/chicken broth (2 bouillon cubes + 3 cups hot water will work)
Salt to taste (if needed) 
1 cup thick coconut milk (for dairy version use low-fat cream or half & half)

Method

Combine everything except the coconut milk in a medium saucepan and bring to a boil.

Lower the heat and simmer for about 10 minutes.

Cover, cool and strain the broth.

Return to the pan along with the coconut milk and simmer for another 5 minutes or until heated through (boiling may cause the coconut milk to split).

Check for seasoning and serve hot.
